You should care about “them” reading your emails, it doesn’t matter how boring or short (short? wtf should that matter?) they are. For just one of many reasons, “they” have passed a mosaic of laws making a lot of things illegal, things you don’t even think about or have any knowledge that they’re illegal. It is almost impossible to live and breathe in a perfectly ordinary day without accidentally and completely unknowingly breaking a law at this point, at least in the USA. So if they’re reading and storing your emails long-term and they need to pick you up at some point in the future, they can use your perfectly innocent, short emails as proof against you.

The “I could care less” (or more properly, “I couldn’t care less”) attitude has been proven a stupid, non-fact-based attitude many times in the past, for many reasons.
