Question. If no third-party servers are involved, it's strictly between my computer & the person I'm sending data to's computer... How exactly does Pounds know over 80 PB of data has been transferred using their app?

If file size is being transferred back up to their servers, what other information is also being shared? File names? Hash values? Would this be any more secure than storing the files on Dropbox or Google Drive or any of the other traditional cloud based backup/sharing services?

To be honest, I've actually spent the last couple of days testing syncthing, and as much as I'd love to say it's the solution, it's still not there yet. CPU usage is excessive (probably due to the encryption and compression), it does not support download resuming (of a partially downloaded file), and it is buggy when a client is stopped then started in the middle of synchronisation.

Soon maybe, but unfortunately not yet.

BTSync use a bunch of technologies to transfer data between peers. Each share uses a unique key to encrypt the data. This key is also used to add new peers. For peers to connect (baring in mind this technology is marketed at home users) it needs a way to poke a hole in the firewall to connect to the other peers (found by DHT/Tracker). It will use UPnP to try and open a port. If that fails it's last resort is to uses BTSync's relay server.

So BTSync can see how much traffic goes in/out of these servers. Count the number of peers that have used their tracker service. But all data is encrypted end to end.
